Grown in the southern states of Chiapa and Oaxaca, Mexico. This coffee is cultivated on farms that average just a few acres in size. With such a small scale production, each producer is able to carefully manage picking and sorting of the coffee cherries. Each producer processes their coffee in their own micro mill, where coffee is depulped and fermented for 24hr before washing and drying.
